North Toraja
Arabica Toraja coffee is a single-origin Arabica grown in the mountainous interior of South Sulawesi, Indonesia. The name traces to “To Riaja,” a Bugis-language term meaning “people of the uplands”, a reference to the indigenous Torajan communities who have farmed these highlands for generations.

Born in the highlands of Toraja, dry hulling is part of the region’s distinctive coffee tradition.
After being fully washed, the coffee is carefully dried in its parchment before the outer layer is removed. This slower, protected drying stage allows the beans to develop gradually while preserving the coffee’s clarity, balance, and distinctive origin character.
Over generations, this process has become part of what makes Toraja coffee unique — known for its balanced acidity, refined body, sweetness, and depth.
